This is my wife Un Hui's recipe for turkey salad. It's simple, yet very delicious. You can use roasted turkey too. We have a bunch of leftover smoked turkey, so that's what my wife used this time. All quantities are approximate and you can change them to suit your tastes.
2 cups smoked turkey, cut into cubes or shredded.
1 finely diced carrot
1 finely diced stalk celery
2 hard boiled eggs, chopped
Mayonnaise
Mix all ingredients, adding mayonnaise until it has reached the desired consistency.
The smoke flavor in the turkey comes out more in this recipe than eating the turkey by itself.
Refrigerate leftovers.
